California/Mediterranean Herbal Chickpea Medley

  • 1 onion diced
  • 2 garlic cloves, minced
  •  1 jalapeño diced
  • 1 can of chickpeas, rinsed and drained
  • spice medley (chipotle powder, cumin, coriander, red chili flakes, salt, cardamom)
  • 1 fresh tomato (diced)
  • handful of dried cherries
  • handful of olives
  • fresh parsley
  • mint leaves
  • tons of cilantro
  • Lemon juice
  • Sprinkle of fresh pepper
  • Cooked rice
  • Crumbled Mexican white cheese

  1. Cook onion, garlic cloves, and jalapano
  2. Add in spices
  3. Add in chickpeas and cook together until soft and fragrant
  4. Add in fresh tomato and cook a second longer
  5. Add in dried cherries, olives, and herbs
  6. Add in squeeze of lemon
  7. Serve over cooked rice
  8. Add in more herbs, crumbled white cheese, and a dash of fresh pepper
